Beyond Easy Lemonade Pies
|Cream Cheese||2 8oz Packages|
|Frozen Lemonade Concentrate||3/4 Cup|
|Evaporated Milk||1 5oz Can|
|Instant Lemon Pudding Mix||3.4 oz Box|
|Individual Graham Cracker Crusts||6-8|
|Mini Shortbread Crusts||10|
Like all of my favorite recipes these are so simple to make and fast too.
I used the small Graham Crackers Crust’s and I also used the small Shortbread Shells I found at Smiths, you can use a whole pie crust if you like. The small crusts come in a pack of 6 if you buy two packs add a bit less filling than I did and add some whipped cream to the top to fill them out.
- In a mixing bowl mix the Cream Cheese until smooth then add the Evaporated Milk and continue to mix until combined add the Pudding mix and mix until blended then add the thawed Lemonade Concentrate. Mix until all combined.
- Transfer the mixture to a piping bag and pipe into the shells, then place in the fridge for at least 3 hours or even overnight.
- Decorate with the Blueberries and serve.
