Boston Bean Salad

Ingredients

Navy Beans 2 Cans
Pinto beans 2 Cans
White Beans 2 Cans
Red Kidney Beans 1 Can
Vegetarian Bacon 1 Cup
Celery 5 Stalks
Kale 2 Cups
Parsley 1/2 Bunch

Dressing

Maple Syrup or Honey 2 Tblsp
Champagne or Apple Cider Vinegar 1 1/2 Tblsp
Dijon Mustard 1 Tblsp
Garlic 4 Cloves
Olive Oil 1/2 Cup
Salt & Pepper

SAM_2036SAM_2032Easy salad that works great as a filling side dish. It just takes opening a can to make!

  1. Open cans, drain and rinse Beans
  2. Mix dressing ingredients together
  3. Cook “Bacon”
  4. Chop Celery, Kale & Parsley & “Bacon”
  5. Mix all ingredients together and leave to let dressing absorb for at least 30 to 60 minutes.
