Citrus Fennel Salad
|Extra Virgin Olive Oil||1/3 Cup|
|White Balsamic Vinegar||2 Tblsp|
|Salt & Pepper|
Great salad loaded with Vitamin C, makes a great winter salad as all the ingredients are readily available.
- Mix Dressing ingredients together
- Peel & slice Mandarins as shown in the picture above, Slice Navel Oranges the same way
- Thinly slice Fennel, Avocado & Shallots
- Dice Mint leaves
Place the Navel Oranges on the bottom of the serving dish or platter then place the Fennel on top of them, next place the Avocado and Mandarin slices on top, spoon dressing over the salad then finish by scattering Shallots & Mint on top.
