Cold Asian Noodle Salad

Salad

Flat Udon Noodles 2 Packages
Persian Cucumbers 4
Toasted Sesame Seeds 2 Tablespoons
Green Onions 3

Dressing

Peanut Butter 8 Tablespoons
Tamari or Soy Sauce 3.5 Tablespoons
Sesame Oil 3 teaspoons
Warm Water 8 Tablespoons
Rice Wine Vinegar 3 Tablespoons
Lime 1
Sugar 2 teaspoons
Wasabi 2 teaspoons
Ginger 1 teaspoon

Simple dish but packed with great flavor, makes a nice change from regular lettuce salads.

I used the KOYO brand Wide Udon Noodles they sell them at most Grocery Stores.

  1. Make the Dressing by juicing the Lime and whisking the ingredients together, refrigerate until you need it.
  2. Cook the noodles according to the package, (remember to take the paper strips off the Noodle bundles) and stir the noodles so they separate while cooking.
  3. Rinse the Noodles under cold water to cool them down.
  4. Slice the Cucumbers and cut the Green Onions on an angle.
  5. Pour enough Dressing to coat the noodles.
  6. Sprinkle with Sesame Seeds and serve.
