Ingredients

Rainbow Swiss Chard 1 Bunch
Romaine Lettuce 1 head
Baby Kale Spinach Mix 3 Cups
Red Cabbage 1/2 head
Radishes 6
Rainbow Carrots 6
Green Onions 4
Roasted Sunflower Seeds 1/4 Cup
Colored Mini Peppers 8

Dressing

Olive oil 1/4 Cup
Maple Syrup 1/4 Cup
Cumin 1 teaspoon
Apple Cider Vinegar 3 Tablespoons
Lemon Juice 1 lemon
Salt & Pepper

This salad is so colorful & healthy that you will run around the block after you eat it (well maybe not quite that healthy)  but you will feel better for eating it!

  1. Mix the Dressing together, set aside.
  2. Chop the peeled Carrots and deseeded Peppers & Radishes.
  3. Chop the Greens, Red Cabbage & Green Onion.
  4. Add the Sunflower Seeds.
  5. Toss everything together with enough dressing to coat the Salad right before you serve it.
