Fattoush Salad with Pomegranate
Ingredients
Romaine Lettuce | 2 Cups | |
Pita Bread | 3 rounds | |
English Cucumber | 1 Whole | |
Parsley | 2 Cups | |
Radish | 1 Cup | |
Cherry Tomatoes | 1 1/2 Cups | |
Mint leaves | 1/2 Cup | |
Pine Nuts | 3 Tbls | |
Green Onions | 1 Cup |
Dressing
Olive Oil | 3/4 Cup | |
Sumac | 4 tsp | |
Crushed Garlic | 2 cloves | |
Red Wine Vinegar | 2 tsp | |
Lemon Zest | from 2 lemons | |
Lemon Juice | 2 Lemons | |
Honey | 2 Tbls | |
Water(to soak Sumac in) | 4-6 tsp | |
Salt & Pepper |
An amazing tasting salad with middle eastern flavors and interesting textures. The only hard part is the dressing and even that is easy.
You want to toast the pita quite well so it doesn’t get too soggy in the salad, I’ve seen cracker bread used too but I love the texture of the chewy Pita Bread.
- Soak Sumac in water for at least 15 minutes (you will add it to the dressing wet)
- Mix all ingredients for dressing starting with Olive Oil & Vinegar add wet Sumac last
- Set dressing aside
- Toast Pine Nuts in a dry pan
- Toast Pita bread in a pan until brown and toasted or in the oven at 350
- Chop Lettuce, Cucumbers, Tomatoes & Radishes
- Chop Green Onions
- Finely chop Parsley & Mint
- Tear Pita bread into bite size pieces
- Toss everything together and sprinkle with Pomegranate seeds
- Sprinkle with more Sumac if you like
