Hummus Dip with Roasted Chickpeas
Ingredients
Chickpeas | 1 can | |
Garlic | 1 Clove | |
Bush's Hummus Made Easy | 1 package | |
Cherry Tomatoes | 1 Cup | |
Parsley | 1/3 cup | |
Red Onion | 1/2 | |
Olive Oil | 1 Tablespoon | |
Salt and Pepper | ||
Lemon | 1 | |
Soy or Coconut Yogurt | 1/2 Cup |
Roasted Chickpeas
Chickpeas | 1 Can | |
Olive Oil | 1 Tablespoon | |
Brown Sugar | 1 teaspoon | |
Smoked Paprika | 1/2 teaspoon | |
Cumin | 1/2 teaspoon | |
Tumeric | 1/2 teaspoon | |
Tumeric | 1/2 teaspoon | |
Oregano | 1/2 teaspoon | |
Salt & Pepper |

Creamy garlic hummus with roasted chickpeas makes a for a tasty combination. It’s a great way to get extra protein!
You can make the Hummus yourself or even use store bought Hummus.
I used the Bush’s Hummus Made Easy just follow the directions on the back, I use this all the time as I never need the big jar of Tahini you need to make it from scratch.
Serve with cut Vegetables and Flatbread and Crackers.
- Pre-Heat the Oven to 425 Degrees.
- Drain and rinse the Chickpeas and coat them with the Oil then the Sugar and Spices, toss so it coats them all.
- Place on a baking sheet and bake for about 30 minutes.
- Make the Hummus following the directions on the back, then adding the Yogurt, Lemon Juice and season with Salt & Pepper.
- Halve the Tomatoes, mince the Garlic and Parsley & dice the Red Onion.
- Mix the Roasted Chick Peas with the Tomato mixture and place on top of the Hummus Dip and serve.
