Ice Cream Sandwiches

Throw these together at the last minute or make them beforehand and keep them in the freezer for a treat! Both ways are so easy.
You can use any combination you like, I used Raspberry White Chocolate Ice Cream and White Chocolate Macadamia Nut Cookies, the other batch I made were Chocolate Chunk Cookies with Monster Cookie Ice Cream, just make sure you use semi soft Bakery Cookies and a good quality Ice Cream you want them creamy not icy.
- Leave the Ice Cream out for about 10 minutes to soften it up slightly so it is easier to scoop.
- Place one large scoopful on one Cookie and sandwich with the second one, then eat immediately or place in the freezer for later.
