Jalapeno Avocado Hummus

Jalapeno Avocado Hummus

Ingredients

White Beans 1 Can
Chick Peas 1 Can
Tahini 1/4 Cup
Avocado 1
Cilantro 1/2 Cup
Jalapenos 2-4
Garlic 2 Cloves
Olive Oil 4 Tablespoons
Cumin 1 teaspoon
Lemon 1
Salt

Instead of the usual bland hummus, this one packs a spicy punch!

If you would like a smoother Hummus rub the skins off the Chick Peas.

Add as many Jalapenos as you like I found that 2 large ones were fine if you like it spicier add more.

  1. Heat the oven on broil and place the Jalapenos on a baking tray and roast under the broiler until dark brown, turning so they brown on all sides, this should take about 5-10 minutes depending on how close your tray is to the broiler.  Remove from the oven place in a bowl and cover with plastic wrap and leave for about 10-15 minutes then peel off the skins and scrape out the seeds.
  2. Drain and rinse the Chick Peas and White Beans, add to a food processor with the Jalapenos, Cumin.
  3. Crush the Garlic and roughly chop the Cilantro, squeeze the Lemon juice and add to the food processor with the Avocado and blend until smooth.
  4. Serve with Vegetables and Flatbread.
