Jicama Red Pepper Slaw
|Chobani non -fat plain Greek Yogurt||1/3 Cup|
|Fresh Lime Juice||2 tsp|
|Finely diced Cilantro||2 Tbls|
|Apple Cider Vinegar||1 1/2 tsps|
|Ground Cumin||1/2 tsp|
|Salt & Pepper|
I “borrowed” this recipe from the Chobani yogurt website.
It’s a very easy salad that uses an unusual ingredient, Jicama, which looks like a round potato and tastes a bit like a potato mixed with an apple. Don’t be scared about the taste, it’s mostly apple!
- “Whisk together Chobani, lime juice, vinegar, sugar, cilantro, cumin, salt and black pepper.
- Refrigerate for 30 minutes.
- In a serving bowl, toss together jicama, scallions and pepper strips.
- Add dressing and toss to combine.”
