Lemony Kale & Quinoa Salad
|Kale||1 Large Bunch|
|Golden Raisins||1/4 Cup|
|Roasted Sunflower Seeds||1/4 Cup|
|Slivered Almonds||1/4 Cup|
|Light Olive Oil||1/4 Cup|
|Maple Syrup||1-2 Tablespoons|
|Dried Oregano||1 teaspoon|
|Salt & Pepper|
Here is a fresh flavored salad that would add a nice balance of healthiness to your table!
If you like Parmesan you can add that to the Salad.
- Cook the Quinoa according to the package and hen set aside to cool.
- Make the Dressing by zesting & juicing one Lemon and squeezing the juice from the rest, mincing the Garlic and adding the to the Oil & Maple Syrup then season with the Herbs & Salt & Pepper.
- Tear the Kale leaves off the stems and chop into smaller pieces.
- Add the Golden Raisins & Nuts to the Kale then stir through the Quinoa and Dressing and serve.
