No Carb Zucchini Salad with Pea Herb Dressing
|Thawed Frozen Peas||1/2 Cup|
|Fresh Mint Leaves||1/4 Cup|
|Fresh Cilantro||1/3 Cup|
|Chili Flakes||1/2 teaspoon|
|Olive Oil||1/4 Cup|
|Cherry Tomatoes||1/2 Cup|
This fresh-tasting Salad that is a great alternative to a high carb pasta salad and takes minutes to throw together, even quicker if you can find the fresh spiralized zucchini already done.
I thawed my peas by running them under warm/hot water until soft.
- Spiralize the Zucchini’s and set aside while you make the Dressing.
- Zest and juice the Lemon add with the thawed Peas and all the other ingredients minus the Oil to a food processor and blend, while the motor runs slowly add the Oil until smooth. Taste and season with Salt & Pepper.
- Toss the Zucchini with the Dressing top with the sliced Cherry Tomatoes.
