Orange Kale Quinoa Salad


Kale 1 Bunch
Cooked Quinoa 2 Cups
Avocado 1
Green Onions 6
Toasted Sliced Almonds 1/2 Cup
Mandarins 1 Can


Avocado Oil 1/4 Cup
Rice Wine Vinegar 1/3 Cup
Garlic Cloves 2
Miso Paste 2-3 Tablespoons
Sesame Oil 2 Tablespoons
Coconut Aminos/Tamari 1 Tablespoon
Mandarin Juice 3 Tablespoons
Fresh Ginger 1 teaspoon

A salad that even kale haters will love!  If you want to hide the kale add a head of romaine to the mix.

Reserve the syrup/juice from the canned Mandarins for the Dressing.

Shortcuts: you could use the Ginger and Garlic you find in tubes in the produce section.

  1. Make the Dressing by grating the Ginger, crushing the Garlic and whisk the other ingredients together until its combined well.
  2. Tear the Kale from the Stems into small pieces and add to a bowl with the cooked Quinoa then add some Dressing and toss then add the diced Avocados, drained Mandarins, diced Green Onions and the Toasted Almonds.
  3. Toss all the ingredients gently with a little more Dressing and serve.
