Peach and Quinoa Superfood Salad
Ingredients
Red Quinoa | 1.5 Cups | |
Red Pepper | 1 | |
Orange Pepper | 1 | |
Diced Red Onion | 1/2 | |
Shelled Edamame | 1 Package | |
Peaches or Nectarines | 2 | |
Cilantro | 1/2 Bunch |
Dressing
Avocado Oil | 1/4 Cup | |
Sherry Vinegar | 6 Tablespoons | |
Agave or Maple Syrup | 1 Tablespoon | |
Salt & Pepper |
Time to make the most of the last of the peaches! You could easily sub out the peaches for apples.
Cook the Quinoa the day before according to the package.
- Make the dressing first and set aside.
- Rinse the Edamame and add to a bowl with the Quinoa.
- Dice the remaining ingredients and toss together with the dressing and serve, leftovers can be stored in the fridge for a day or two.
