Peach and Quinoa Superfood Salad
|Red Quinoa||1.5 Cups|
|Diced Red Onion||1/2|
|Shelled Edamame||1 Package|
|Peaches or Nectarines||2|
|Avocado Oil||1/4 Cup|
|Sherry Vinegar||6 Tablespoons|
|Agave or Maple Syrup||1 Tablespoon|
|Salt & Pepper|
Time to make the most of the last of the peaches! You could easily sub out the peaches for apples.
Cook the Quinoa the day before according to the package.
- Make the dressing first and set aside.
- Rinse the Edamame and add to a bowl with the Quinoa.
- Dice the remaining ingredients and toss together with the dressing and serve, leftovers can be stored in the fridge for a day or two.
