Peppery Crunchy Kohlrabi Slaw

Ingredients

Spinach 3 Cups
Whole Kohlrabi 2
Radishes 1 Bunch
Green Onions 6
Romaine Lettuce 1 head

Horseradish Dressing

Creamy Horseradish 1/4 Cup
Mayonnaise 4 Tablespoons
Cracked Black Pepper 2 Tablespoons
Sugar 1 Tablespoon

Kohlrabi is a strange little vegetable (easily sourced in most grocery stores), it tastes like a mix of cabbage & broccoli stems, very crunchy and tastes fresh!

Add more Horseradish if you like it hot, I actually skipped the Mayo and just used the creamy Horseradish.

  1. Make the Dressing by mixing all the ingredients together and season to taste. Set aside.
  2. Peel and matchstick the Kohlrabi.
  3. Quarter the Radishes.
  4. Dice the Green Onions.
  5. Shred the Spinach and Romaine into ribbons.
  6. Add it all to a bowl and mix with the Dressing and serve.
