Pickled Vegetable & Black Rice Salad

Salad

Black Rice 1 Cup
Carrots 3
English Cucumber 1
Red Onion 1 small
Red Pepper 1
Sliced Pepperoncini 1/2 Cup
Italian Parsley 1/4 Cup

Dressing

Red Wine Vinegar 1/2 Cup
Olive Oil 1/4 Cup
Lemon Juice 1 Lemon
Maple Syrup 1 Tablespoon
Dijon Mustard 1 teaspoon
Dried Basil 1 teaspoon
Oregano 1 teaspoon
Salt & Pepper

This is a fabulous healthy salad and the black rice adds a great texture and nutty flavor!

  1. Cook the Rice according to the package and set aside to cool.
  2. Make the Dressing by whisking all the ingredients together and adjusting to taste.
  3. Julienne or matchstick the Carrots, Cucumber, Red Pepper & Red Onion.
  4. Add the Pepperoncini slices to the julienned/matchsticked Vegetables.
  5. Add the cooled Rice and mix with the Dressing and let marinate for at least 30 minutes before serving.
