Snap Pea White Bean Radish Salad


White Beans 1 Can
Watermelon Radish 1
Sugar Snap Peas 2 Cups
Cilantro Leaves 2-3 Tablespoons


Shallot 1 finely diced
Dijon Mustard 1 teaspoon
Lemon 1 zested and squeezed
Light Olive Oil 4 Tablespoons
Salt 1/4 teaspoon
Sugar or Agave 1 teaspoon



Yay Spring! The white beans in this add a nice creamy texture that really works well with the crunchy Snap Peas.

If you cant find Watermelon Radishes just use regular ones.

  1.  Make the Dressing by whisking all the ingredients together and adjusting to taste.  Set aside.
  2. Peel, halve and thinly slice the Watermelon Radish.
  3.  Cut the Snap Peas diagonally with scissors.
  4.  Drain and rinse the White Beans, add all the ingredients together with the Dressing and garnish with the Cilantro leaves.
