Spicy Chopped Southwest Salad
Ingredients
Corn | 2 Cans | |
Black Beans | 1 Can | |
Red Pepper | 1 | |
Yellow Pepper | 1 | |
Orange Pepper | 1 | |
Romaine Hearts | 2 | |
Grape Tomatoes | 1 Cup | |
Green Onions | 5 |
Cilantro Dressing
Cilantro | 1 Bunch | |
Avocado | 1 | |
Lime | 1 | |
Garlic Cloves | 2 | |
Olive Oil | 1/4 Cup | |
Apple Cider Vinegar | 1 1/2 teaspoons | |
Agave | 1 teaspoon | |
Salt & Pepper |



- Make the Dressing first by blending everything together in a food processor, set aside in the fridge.
- Drain and rinse the Corn then cook in a pan until charred and set aside to cool.
- Chop the Peppers into chunks, dice the Green Onions.
- Chop the Lettuce into bite size chunks.
- Toss the salad ingredients with the dressing and then top with the Tortilla Strips and serve.
