Fresh Corn | 3 ears | |
Fresh Spinach | 2 Cups | |
Fresh Basil | 1/4 Cup | |
Shaved Parmesan | 1/4 Cup | |
Toasted Pine Nuts | 1/4 cup |
Dressing
Lemon Juice | 1/2 Cup | |
Olive Oil | 1/2 Cup | |
Parmesan Cheese (real) | 1/2 Cup | |
Honey | 1 Tablespoon | |
Salt & Pepper | 1 tsp each |
- Julienne Zucchini & Squash
- Toast Pine Nuts in a dry pan until slightly colored
- Slightly cooked corn
- Thinly slice red peppers
- Chiffonade Basil
- Thinly slice Red Onion
- Tear Spinach
- Make dressing
- Only use enough dressing to “wet” the salad or it will get soggy
- Shave Parmesan with a vegetable peeler mix a little through the salad and use the rest for garnish
