Super Simple Thai Cucumber Salad
Ingredients
Persian Cucumbers | 6 | |
Chopped Cilantro | 1/4 Cup | |
Fresh Mint Leaves | 2 Tablespoons | |
Shredded Toasted Coconut | 1 Tablespoon | |
Roasted Cashew Pieces | 2 Tablespoons |
Dressing
Minced Shallots | 2 | |
Serrano Chili | 1 | |
Minced Fresh Ginger | 1 inch piece | |
Limes | 2 | |
Fish Sauce | 2 Tablespoons | |
Coconut Sugar | 2 teaspoons | |
Canola Oil | 3 teaspoons |
A fresh cucumber Salad that has a lot of great flavor! You could serve this with grilled chicken or salmon.
For a Vegetarian option use Ponzu or Soy instead of the Fish Sauce, anything salty will do.
- Make the Dressing by adding the Minced Shallots, finely diced Serranos (take out the seeds for less heat), Minced Ginger, juice the Limes and combine with all the other ingredients and set aside until the Sugar has dissolved.
- Slice the Cucumbers thinly lengthwise on a mandoline.
- Spoon some of the Dressing over the Salad.
- Place the sliced Cucumbers on plate and sprinkle on the other toppings.
