Thai Chili Cucumber Salad

Dressing

Brown Sugar 2 teaspoons
Rice Wine Vinegar 2 teaspoons
Lime 1
Canola Oil 1 Tablespoon
Ponzu Sauce 1 Tablespoon

Salad

English Cucumbers 2
Bean Sprouts 2 Cups
Red Chilis 2
Green Onions 3
Basil & Cilantro Leaves 1/4 Cup
Mint leaves 1/4 Cup
Toasted Coconut Flakes 1/4 Cup
Cilantro

  1. Make the Dressing by whisking everything together and setting aside.
  2. Roughly chop the Cucumber, Cilantro, Basil, Mint & Cashews.
  3. Finely chop the Red Pepper & Green Onions.
  4. Toss everything together and sprinkle with the Coconut Flakes and serve.
