Thai Watermelon Salad

Ingredients

Watermelon 4 Cups
Persian Cucumbers 6
Spicy or Wasabi Peanuts 1/2 Cup
Fresh Mint 1/4 Cup

Dressing

Orange 1
Limes 2
Rice Wine Vinegar 3 Tablespoons
Tamari 2 Tablespoons
Sriracha 1 teaspoon
Fresh Ginger 1 teaspoon
Honey or Agave 1-2 teaspoons

  1. Make the dressing by adding the Citrus Juice and zest to a measuring cup, add the Sriracha, peel and grate the Ginger
  2. Cut the Watermelon into cubes.
  3. Cut the Cucumbers lengthwise then into chunks.
  4. Crush the Peanuts.
  5. Toss the Watermelon & Cucumbers with the dressing then add diced Jalapeno if you like.
  6. Top with torn Mint Leaves and the Crushed Peanuts.
  7. Serve cold.
