Whole Roasted Cauliflower with Mustard Caper Dressing
Cauliflower gets a bad rap, but it is so tasty and so easy to use! Anyone can make this recipe.
Pre-Heat oven to 400 degrees.
Trim the Cauliflower of all the outside green leaves and cut the core at the bottom so it sits flat on the tray.
Place on a baking sheet or a pie plate lined with Baking/Parchment Paper.
Drizzle the 2 Tblsp of Olive Oil over the Cauliflower and sprinkle with Salt & Pepper.
Place in the oven and bake for about an hour or longer, to test if its done pierce the cauliflower with sharp knife, it should go through easily. Cooking times may vary depending on your oven or how many things you have in the oven
While its cooking make the dressing by dicing the capers and mixing with the Lemon Juice, Mustard and 1 Tblsp of the Parsley, then add the Olive Oil in a stream while whisking so it comes together.
Pour dressing over cooked Cauliflower, garnish with remaining Parsley and serve.
