Winter Kale Apple Salad

Ingredients

Baby Kale 4 Cups
Candied Pecans 1/2 Cup
Dried Cranberries 1/2 Cup
Apple Chips 1 Cup
Red Onion 1/2
Watermelon Radish 1/2

Dressing

Olive Oil 6 Tablespoons
Champagne Vinegar 4 teaspoons
Honey or Agave 4 teaspoons
Orange 1 Juiced & Zested
Dijon Mustard 2 teaspoons
Salt & Pepper
_MG_0043_MG_0041This salad will help you slowly adjust to the cooler fall weather! It has some great texture with the crunchy pecans and apple chips.

I honestly didn’t measure the apple chips, I just bought a small bag and dumped them in.

  1. Pickle the Red Onion using this Recipe, if you don’t have time just slice the Onion and let them sit in cold Water to remove the sting.
  2. Mix the dressing ingredients together & set aside.
  3. Add the baby Kale Mix to a large bowl and mix in some of the dressing, enough to cover the Leaves mix in the Pecans, Cranberries and Pickled Red Onions.
  4. Top with the Apple Chips and Goats Cheese if you like, I added a handful of Matchsticked Watermelon Radishes.
