Brown Rice Sesame Wasabi Salad


Brown Rice 2 Cups (cooked)
Avocado 2
Persian Cucumbers 4
Red Cabbage 1/4
Carrots 2
Cilantro 1 Bunch
Broccoli 3 Cups
Asparagus 1 Bunch
Green Onions 6
Toasted Sesame Seeds 1 Tablespoon

Wasabi Dressing

Wasabi 1-2 teaspoons
Rice Wine Vinegar 1-2 Tablespoons
Japanese Mayonnaise 1/3 Cup
Salt & Pepper
Brown Rice Sesame Wasabi Salad

  1. Make the Dressing by adding the Mayo, Wasabi, Rice Wine Vinegar to a small bowl and mix together, set aside in the fridge.
  2. Toss the Asparagus in a pan of Hot Water for about 1 minute if it the thin kind and 2 if its thicker.  Run under cold water to stop the cooking process.
  3. Chop the Broccoli, Cilantro, Avocado & Asparagus, thinly slice the Red Cabbage, Cucumber & Green Onion.
  4.  Toss the Rice with the Dressing and then stir through the Vegetables and finish with the Toasted Sesame Seeds.
