Brown Rice Sesame Wasabi Salad

Ingredients
Brown Rice | 2 Cups (cooked) | |
Avocado | 2 | |
Persian Cucumbers | 4 | |
Red Cabbage | 1/4 | |
Carrots | 2 | |
Cilantro | 1 Bunch | |
Broccoli | 3 Cups | |
Asparagus | 1 Bunch | |
Green Onions | 6 | |
Toasted Sesame Seeds | 1 Tablespoon |
Wasabi Dressing
Wasabi | 1-2 teaspoons | |
Rice Wine Vinegar | 1-2 Tablespoons | |
Japanese Mayonnaise | 1/3 Cup | |
Salt & Pepper |
- Make the Dressing by adding the Mayo, Wasabi, Rice Wine Vinegar to a small bowl and mix together, set aside in the fridge.
- Toss the Asparagus in a pan of Hot Water for about 1 minute if it the thin kind and 2 if its thicker. Run under cold water to stop the cooking process.
- Chop the Broccoli, Cilantro, Avocado & Asparagus, thinly slice the Red Cabbage, Cucumber & Green Onion.
- Toss the Rice with the Dressing and then stir through the Vegetables and finish with the Toasted Sesame Seeds.
