Chopped Summer Salad

Ingredients

Romaine Lettuce 1
Yellow Pepper 1
Cherry Tomatoes 2 Cups
Radishes 4
Avocado 1
Mini Cucumbers 4
Italian Parsley 1/2 Cup

Dressing

Avocado Oil 1/2 Cup
White Balsamic Vinegar 1/4 Cup
Maple Syrup 2 Tablespoons
Salt & Pepper

This couldn’t be easier, you literally chop everything and toss it in the dressing!

  1. Make the dressing first by combining everything and whisking it together.
  2. Roughly chop the Romaine, Avocado & Cucumber and add to a bowl.
  3. Dice the Peppers & Tomatoes, slice the Radishes and toss it all together with Dressing season with Salt & Pepper.
