Ditalini Pasta 1 Cup
Romaine Lettuce 1
Red Cabbage 1 Cup
Cherry Tomatoes 2 Cups
Persian Cucumbers 2
Green Onions 4
Vege Bacon 1 Cup
Feta or Goat Cheese 1/2 Cup

Balsamic Dressing

Balsamic Vinegar 1/4 Cup
Olive Oil 1/2 Cup
Fresh Garlic Cloves 3
Sugar 1 teaspoon
Italian Seasoning 1/4 teaspoon
Colorful Chopped Italian Salad


  1. Make the Dressing by blitzing all the ingredients together and placing it in the fridge.
  2. Cook the pasta according to the directions on the box.
  3. Roughly chop the Lettuce and place in a bowl
  4. Dice the Red Cabbage & Green Onion.
  5. Halve the Tomatoes.
  6. Crumble the “Bacon” & Cheese.
  7. Arrange everything on top of the Lettuce and serve with the Dressing.
