Green Onions | 2 | |
Cilantro | 1/2 Bunch |
Dressing
Chobani non -fat plain Greek Yogurt | 1/3 Cup | |
Fresh Lime Juice | 2 tsp | |
Finely diced Cilantro | 2 Tbls | |
Apple Cider Vinegar | 1 1/2 tsps | |
Ground Cumin | 1/2 tsp | |
Salt & Pepper |
I “borrowed” this recipe from the Chobani yogurt website.
It’s a very easy salad that uses an unusual ingredient, Jicama, which looks like a round potato and tastes a bit like a potato mixed with an apple. Don’t be scared about the taste, it’s mostly apple!
- “Whisk together Chobani, lime juice, vinegar, sugar, cilantro, cumin, salt and black pepper.
- Refrigerate for 30 minutes.
- In a serving bowl, toss together jicama, scallions and pepper strips.
- Add dressing and toss to combine.”
