Jicama Red Pepper Slaw

Ingredients

Jicama 1 Large
Red pepper 1
Green Onions 2
Cilantro 1/2 Bunch

Dressing

Chobani non -fat plain Greek Yogurt 1/3 Cup
Fresh Lime Juice 2 tsp
Finely diced Cilantro 2 Tbls
Apple Cider Vinegar 1 1/2 tsps
Ground Cumin 1/2 tsp
Salt & Pepper

I “borrowed” this recipe from the Chobani yogurt website.

It’s a very easy salad that uses an unusual ingredient, Jicama, which looks like a round potato and tastes a bit like a potato mixed with an apple. Don’t be scared about the taste, it’s mostly apple!

  1. “Whisk together Chobani, lime juice, vinegar, sugar, cilantro, cumin, salt and black pepper.
  2. Refrigerate for 30 minutes.
  3. In a serving bowl, toss together jicama, scallions and pepper strips.
  4. Add dressing and toss to combine.”
