Peach and Quinoa Superfood Salad


Red Quinoa 1.5 Cups
Red Pepper 1
Orange Pepper 1
Diced Red Onion 1/2
Shelled Edamame 1 Package
Peaches or Nectarines 2
Cilantro 1/2 Bunch


Avocado Oil 1/4 Cup
Sherry Vinegar 6 Tablespoons
Agave or Maple Syrup 1 Tablespoon
Salt & Pepper
Peach and Quinoa Superfood Salad

Time to make the most of the last of the peaches! You could easily sub out the peaches for apples.

Cook the Quinoa the day before according to the package.

  1. Make the dressing first and set aside.
  2.  Rinse the Edamame and add to a bowl with the Quinoa.
  3. Dice the remaining ingredients and toss together with the dressing and serve, leftovers can be stored in the fridge for a day or two.
