Winter Chopped Salad


Chopped Romaine Lettuce 4-5 Cups
Tomatoes 2 Cups
Avocados 2
Fire Roasted Corn 1 Can
Granny Smith Apples 2
Manchego Cheese 1 Cup
Pomegranate 1

Balsamic Dressing

Olive Oil 1/2 Cup
Balsamic Vinegar 3 Tablespoons
Dijon Mustard 2 teaspoons
Finely Diced Shallot 1 Tablespoon
Crushed Garlic 2 Cloves
Salt 1/2 teaspoon
Pepper 1/4 teaspoon
Maple Syrup 1 teaspoon

An easy salad to customize, just leave out anything you don’t want and add in anything you like!

  1. Make the Dressing by whisking all the ingredients together and setting it aside.
  2. Add the Chopped Lettuce to a large bowl, if using bagged Lettuce rinse it and chop it into smaller pieces.
  3. Drain and rinse the corn, Chop the Tomatoes, Avocado Apples (no need to peel them).  Dice the Cheese into small pieces.
  4. Add everything together and serve with the Pomegranates on top and the Dressing on the side.
