Winter Chopped Salad
Ingredients
Chopped Romaine Lettuce | 4-5 Cups | |
Tomatoes | 2 Cups | |
Avocados | 2 | |
Fire Roasted Corn | 1 Can | |
Granny Smith Apples | 2 | |
Manchego Cheese | 1 Cup | |
Pomegranate | 1 |
Balsamic Dressing
Olive Oil | 1/2 Cup | |
Balsamic Vinegar | 3 Tablespoons | |
Dijon Mustard | 2 teaspoons | |
Finely Diced Shallot | 1 Tablespoon | |
Crushed Garlic | 2 Cloves | |
Salt | 1/2 teaspoon | |
Pepper | 1/4 teaspoon | |
Maple Syrup | 1 teaspoon |
An easy salad to customize, just leave out anything you don’t want and add in anything you like!
- Make the Dressing by whisking all the ingredients together and setting it aside.
- Add the Chopped Lettuce to a large bowl, if using bagged Lettuce rinse it and chop it into smaller pieces.
- Drain and rinse the corn, Chop the Tomatoes, Avocado Apples (no need to peel them). Dice the Cheese into small pieces.
- Add everything together and serve with the Pomegranates on top and the Dressing on the side.
