Rainbow Swiss Chard | 1 Bunch | |
Romaine Lettuce | 1 head | |
Baby Kale Spinach Mix | 3 Cups | |
Red Cabbage | 1/2 head | |
Radishes | 6 | |
Rainbow Carrots | 6 | |
Green Onions | 4 | |
Roasted Sunflower Seeds | 1/4 Cup | |
Colored Mini Peppers | 8 |
Dressing
Olive oil | 1/4 Cup | |
Maple Syrup | 1/4 Cup | |
Cumin | 1 teaspoon | |
Apple Cider Vinegar | 3 Tablespoons | |
Lemon Juice | 1 lemon | |
Salt & Pepper |



This salad is so colorful & healthy that you will run around the block after you eat it (well maybe not quite that healthy) but you will feel better for eating it!
- Mix the Dressing together, set aside.
- Chop the peeled Carrots and deseeded Peppers & Radishes.
- Chop the Greens, Red Cabbage & Green Onion.
- Add the Sunflower Seeds.
- Toss everything together with enough dressing to coat the Salad right before you serve it.
