Green Hummus
Ingredients
Spinach | 2 Cups | |
Arugula | 1 Cup | |
Cilantro | 1 Bunch | |
Green Onions | 6 | |
Garlic | 2 Cloves | |
Olive Oil | 1 Cup | |
Garbanzo Beans | 4 Cups | |
Lemon Juice | 1/4 Cup | |
Salt & Pepper | 1 teaspoon of each |
This is a favorite recipe of mine from one of my favorite L.A restaurants, Tender Greens I always get the “Happy Vegan” plate, I love it, its so healthy and it actually tastes good!
It is so easy to make you basically dump everything into a food processor then drizzle the Olive Oil & Lemon Juice at the end, season with Salt & Pepper, you can add as much or as little of anything except the Garbanzo beans & Oil those are necessary.
If you would like a smoother Hummus you can “skin” the Garbanzo beans by rubbing them off between paper towels, I do this for regular Hummus but I couldn’t be bothered with this one as their are a lot of chunky ingredients anyway.
That’s it!
Serve with any vegetables you like to dip or Pita bread, Crackers etc. This would also work great as a spread on a Vegetable sandwich.
