Jalapeno Avocado Hummus
Ingredients
White Beans | 1 Can | |
Chick Peas | 1 Can | |
Tahini | 1/4 Cup | |
Avocado | 1 | |
Cilantro | 1/2 Cup | |
Jalapenos | 2-4 | |
Garlic | 2 Cloves | |
Olive Oil | 4 Tablespoons | |
Cumin | 1 teaspoon | |
Lemon | 1 | |
Salt |
Instead of the usual bland hummus, this one packs a spicy punch!
If you would like a smoother Hummus rub the skins off the Chick Peas.
Add as many Jalapenos as you like I found that 2 large ones were fine if you like it spicier add more.
- Heat the oven on broil and place the Jalapenos on a baking tray and roast under the broiler until dark brown, turning so they brown on all sides, this should take about 5-10 minutes depending on how close your tray is to the broiler. Remove from the oven place in a bowl and cover with plastic wrap and leave for about 10-15 minutes then peel off the skins and scrape out the seeds.
- Drain and rinse the Chick Peas and White Beans, add to a food processor with the Jalapenos, Cumin.
- Crush the Garlic and roughly chop the Cilantro, squeeze the Lemon juice and add to the food processor with the Avocado and blend until smooth.
- Serve with Vegetables and Flatbread.
