Layered Crunchy Wonton Salad


Savoy or Napa Cabbage 1/2
Carrots 3-4
Snow Peas 2 Cups
Watermelon Radish 1 Large
Persian Cucumbers 4
Sliced Mangoes 2
Green Onions 6
Cilantro 1 Bunch
Wonton Strips 1 Cup
Black Sesame 3 Tablespoons

Mango Dressing

Diced Mangoes 1 Can
Limes 2
Oranges 2
Jalapeno 1
Honey or Agave 2 Tablespoons
Canola Oil 1/4 Cup
Garlic Cloves 1
Salt 1/2 teaspoon
Cumin 1/2 teaspoon

  1. Make the dressing by draining the canned Mango, add to a food processor with the remaining ingredients.
  2. Shred the Cabbage and add to a bowl, shred or matchstick the Carrots & Radish, add to the bowl, trim the Snow Peas and layer over the Carrots.
  3. Add the Sliced Mangoes.
  4. Diagonally cut the Green Onions and roughly chop the Cilantro, add to the bowl.
  5. Thinly slice the Cucumber lengthwise and roll up and place on top of the Salad
  6. Place the Wonton Strips and sprinkle the Black Sesame Seeds.
  7. Serve with the Dressing on the side.
