Lemony Kale & Quinoa Salad

Salad

Quinoa 1 Cup
Kale 1 Large Bunch
Golden Raisins 1/4 Cup
Roasted Sunflower Seeds 1/4 Cup
Slivered Almonds 1/4 Cup

Lemon Dressing

Lemons 3-4
Light Olive Oil 1/4 Cup
Garlic Cloves 3
Maple Syrup 1-2 Tablespoons
Dried Oregano 1 teaspoon
Salt & Pepper

Here is a fresh flavored salad that would add a nice balance of healthiness to your table!

If you like Parmesan you can add that to the Salad.

  1. Cook the Quinoa according to the package and hen set aside to cool.
  2. Make the Dressing by zesting & juicing one Lemon and squeezing the juice from the rest, mincing the Garlic and adding the to the Oil &  Maple Syrup then season with the Herbs & Salt & Pepper.
  3. Tear the Kale leaves off the stems and chop into smaller pieces.
  4. Add the Golden Raisins & Nuts to the Kale then stir through the Quinoa and Dressing and serve.
