Moroccan Watermelon Salad with Creamy Feta dressing


Watermelon 4-5 Cups
Turkish or English Cucumbers 2 Cups
Red Onion 1/4 Cup
Chopped Mint 1/2 Cup
Chopped Italian Parsley 1/2 Cup
Toasted Pistachios 1/4 Cup
Kosher salt 2 pinches
Sumac 2 Pinches

Feta Dressing

Olive Oil 1/4 Cup
White Balsamic Vinegar 1/8 Cup

Feta Dressing

Feta cheese 3/4 Cup
Greek yogurt 3 Tablespoons
Green Onion 3
Olive Oil 3 Tablespoons
Red Wine Vinegar 3 Tablespoons
Garlic 2 Cloves
Mixed Greek Herbs 1/4 Teaspoons
Salt & Pepper

This is a fabulous salad for this time of year as all the ingredients are as fresh as you can get. I adapted the recipe from I added the Feta dressing recipe to this as I didn’t want the feta in the salad, skip the dressing and feel free to add crumbled¬†Feta right to the salad for an even easier preparation! I served mine on a bed of arugula, spinach would work or eliminate it completely its a pretty salad and looks great on its own.¬†To finish it off sprinkle with Sumac and serve.

  1. Cube Watermelon
  2. Cut Cucumber into chunks
  3. Thinly slice Red Onion (soak in water to remove harsh onion taste)
  4. Chop fresh herbs
  5. Mix Oil & vinegar,salt & 1 pinch of Sumac,
  6. Gently toss all ingredients together with Oil & Vinegar dressing
  7. Serve in a large bowl or on a large platter so the Watermelon doesn’t get smashed
  8. Keep cold and serve Feta dressing on the side
