No Carb Zucchini Salad with Pea Herb Dressing

Zucchinis | 2-3 |
Dressing
Thawed Frozen Peas | 1/2 Cup | |
Fresh Mint Leaves | 1/4 Cup | |
Fresh Cilantro | 1/3 Cup | |
Lemon | 1 | |
Chili Flakes | 1/2 teaspoon | |
Olive Oil | 1/4 Cup |
Garnish
Cherry Tomatoes | 1/2 Cup |



I thawed my peas by running them under warm/hot water until soft.
- Spiralize the Zucchini’s and set aside while you make the Dressing.
- Zest and juice the Lemon add with the thawed Peas and all the other ingredients minus the Oil to a food processor and blend, while the motor runs slowly add the Oil until smooth. Taste and season with Salt & Pepper.
- Toss the Zucchini with the Dressing top with the sliced Cherry Tomatoes.
