Orange Kale Quinoa Salad
|Cooked Quinoa||2 Cups|
|Toasted Sliced Almonds||1/2 Cup|
|Avocado Oil||1/4 Cup|
|Rice Wine Vinegar||1/3 Cup|
|Miso Paste||2-3 Tablespoons|
|Sesame Oil||2 Tablespoons|
|Coconut Aminos/Tamari||1 Tablespoon|
|Mandarin Juice||3 Tablespoons|
|Fresh Ginger||1 teaspoon|
A salad that even kale haters will love! If you want to hide the kale add a head of romaine to the mix.
Reserve the syrup/juice from the canned Mandarins for the Dressing.
Shortcuts: you could use the Ginger and Garlic you find in tubes in the produce section.
- Make the Dressing by grating the Ginger, crushing the Garlic and whisk the other ingredients together until its combined well.
- Tear the Kale from the Stems into small pieces and add to a bowl with the cooked Quinoa then add some Dressing and toss then add the diced Avocados, drained Mandarins, diced Green Onions and the Toasted Almonds.
- Toss all the ingredients gently with a little more Dressing and serve.
