Peppery Crunchy Kohlrabi Slaw
|Romaine Lettuce||1 head|
|Creamy Horseradish||1/4 Cup|
|Cracked Black Pepper||2 Tablespoons|
Kohlrabi is a strange little vegetable (easily sourced in most grocery stores), it tastes like a mix of cabbage & broccoli stems, very crunchy and tastes fresh!
Add more Horseradish if you like it hot, I actually skipped the Mayo and just used the creamy Horseradish.
- Make the Dressing by mixing all the ingredients together and season to taste. Set aside.
- Peel and matchstick the Kohlrabi.
- Quarter the Radishes.
- Dice the Green Onions.
- Shred the Spinach and Romaine into ribbons.
- Add it all to a bowl and mix with the Dressing and serve.
