Black Rice | 1 Cup | |
Carrots | 3 | |
English Cucumber | 1 | |
Red Onion | 1 small | |
Red Pepper | 1 | |
Sliced Pepperoncini | 1/2 Cup | |
Italian Parsley | 1/4 Cup |
Dressing
Red Wine Vinegar | 1/2 Cup | |
Olive Oil | 1/4 Cup | |
Lemon Juice | 1 Lemon | |
Maple Syrup | 1 Tablespoon | |
Dijon Mustard | 1 teaspoon | |
Dried Basil | 1 teaspoon | |
Oregano | 1 teaspoon | |
Salt & Pepper |




- Cook the Rice according to the package and set aside to cool.
- Make the Dressing by whisking all the ingredients together and adjusting to taste.
- Julienne or matchstick the Carrots, Cucumber, Red Pepper & Red Onion.
- Add the Pepperoncini slices to the julienned/matchsticked Vegetables.
- Add the cooled Rice and mix with the Dressing and let marinate for at least 30 minutes before serving.
