Rainbow Carrot Slaw
|Rainbow Carrots||1 Bag / 6-8 Carrots|
|Spinach or Arugula||1 Cup|
|Chopped Dried Cherries/Cranberries||1 Cup|
|Lemon Juice||1/2 Cup|
|Olive Oil||4 Tbls|
|Seasoned Salt||1 tsp|
Letting this sit for an hour or so before you serve it absorbs the dressing and really softens the carrots.
Zest the lemons before squeezing them and add to the dressing.
Add some Parsley or Cilantro if you like.
- Matchstick carrots
- Mix dressing
- Shred Spinach or arugula
- Mince Cherries or Cranberries
- Toss everything together and serve
