Spicy Chopped Southwest Salad

Ingredients

Corn 2 Cans
Black Beans 1 Can
Red Pepper 1
Yellow Pepper 1
Orange Pepper 1
Romaine Hearts 2
Grape Tomatoes 1 Cup
Green Onions 5

Cilantro Dressing

Cilantro 1 Bunch
Avocado 1
Lime 1
Garlic Cloves 2
Olive Oil 1/4 Cup
Apple Cider Vinegar 1 1/2 teaspoons
Agave 1 teaspoon
Salt & Pepper

I love a spicy salad, and this is such an easy one to throw together, for an easier shortcut use a pre-made dressing.

  1. Make the Dressing first by blending everything together in a food processor, set aside in the fridge.
  2. Drain and rinse the Corn then cook in a pan until charred and set aside to cool.
  3. Chop the Peppers into chunks, dice the Green Onions.
  4. Chop the Lettuce into bite size chunks.
  5. Toss the salad ingredients with the dressing and then top with the Tortilla Strips and serve.
