Stacked Summer Salad
Zucchini | 3 | |
Yellow Squash | 3 | |
Red Onion | 1 medium | |
Peeled Carrots | 3 | |
Basil Pesto (fresh or jarred) | 5 Tablespoons | |
Shaved Parmesan | ||

This salad can be made up to 8 hours in advance.
- Thinly slice zucchini and squash on a mandoline.
- Salt zucchini lightly and place in a colander to drain (about 15 minutes).
- Thinly slice red onion and carrot on a mandoline.
- Rinse zucchini and pat dry.
- Layer zucchini, squash, carrots, onion, and pesto in a 2 quart rectangular or square dish.
- Repeat layers.
- If there is liquid in the dish, drain excess.
- Garnish with shaved parmesan and basil. (I turned mine upside down to serve, so you are really garnishing the bottom.)
- Garnish the serving dish with any extra pesto.
I thought this would collapse but it held together very well. I held it with one hand and sliced it with a serrated knife. Worked great!!
