Vegan Watermelon Quinoa Tabbouleh

Ingredients

Watermelon 2 Cups
Quinoa 2 Cups (cooked)
Green Onions 3
Fresh Italian Parsley 1/2 Cup
Fresh Mint 1/4 Cup
Lemon 1
Olive Oil 1/4 Cup
Salt & Pepper
Pine Nuts 3 Tablespoons

Vegan Watermelon Quinoa Tabbouleh

A cool twist on traditional tabbouleh by using fresh watermelon!

  1. Cook the Quinoa according to the package and set aside to cool.
  2. Chop the Green Onion.
  3. Cut the Watermelon into cubes.
  4. Chop the Parsley & Mint.
  5. When the Quinoa is cool add the Herbs to it and stir to combine.
  6. Zest the Lemon and add it to the Salad.
  7. Squeeze the rest of the Lemon into the Salad along with Olive Oil and stir to combine.
  8. Gently mix in the Watermelon and season with Salt & Pepper then serve.
  9. Garnish with the Pine Nuts.
