Winter Kale Apple Salad
|Baby Kale||4 Cups|
|Candied Pecans||1/2 Cup|
|Dried Cranberries||1/2 Cup|
|Apple Chips||1 Cup|
|Olive Oil||6 Tablespoons|
|Champagne Vinegar||4 teaspoons|
|Honey or Agave||4 teaspoons|
|Orange||1 Juiced & Zested|
|Dijon Mustard||2 teaspoons|
|Salt & Pepper|
I honestly didn’t measure the apple chips, I just bought a small bag and dumped them in.
- Pickle the Red Onion using this Recipe, if you don’t have time just slice the Onion and let them sit in cold Water to remove the sting.
- Mix the dressing ingredients together & set aside.
- Add the baby Kale Mix to a large bowl and mix in some of the dressing, enough to cover the Leaves mix in the Pecans, Cranberries and Pickled Red Onions.
- Top with the Apple Chips and Goats Cheese if you like, I added a handful of Matchsticked Watermelon Radishes.
