Salad
Fennel | 1 Bulb | |
Granny Smith Apples | 2 | |
Celery | 4 Stalks | |
Orange | 1-2 | |
Toasted Walnuts | 1/4 Cup |
Dressing
Orange Juice | 2.-3 Tblsp | |
Dijon Mustard | 1 1/2 Tblsp | |
Canola Oil | 2-3 Tblsp | |
Salt & Pepper |
Fabulous crunchy salad/slaw that you can throw together in minutes. Would pair well with Grilled Salmon
- Cut Fennel bulb in half and slice thin
- Segment orange by cutting all rind and pith away, cut in-between each piece of membrane, here’s how, save the cut away pieces for the juice needed in the dressing
- Thinly slice Celery
- Cut Apples in to Matchsticks ( a mandolin is best)
- Toss all ingredients with the dressing except the toasted walnuts and segmented oranges
- Place salad on platter and garnish with orange segments and toasted walnuts
